  • 2 apples peeled and finely diced
Bread batter
  • 2 cup all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.6666666667 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 eggs
  • 1.5 tsp vanilla
  • 0.5 cup buttermilk
Cinnamon glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla
  • 0.25 tsp cinnamon

Equipment

  • 1 sheet pan
  • 1 loaf pan

Method

Prep
  1. Preheat the oven to 350F and grease a 9x5 loaf pan.
  2. In a bowl, mix brown sugar, cinnamon, allspice, and cardamom, then toss half of the spice mix with the diced apples.
Make the batter
  1. Beat the softened butter and granulated sugar until fluffy, then beat in the eggs and vanilla until smooth.
  2. Whisk the all-purpose flour, baking powder, baking soda, and salt together.
  3. Alternate adding the dry mixture and the buttermilk to the butter mixture, mixing just until combined.
Layer and swirl
  1. Pour half the batter into the prepared loaf pan, then layer the spiced apple mixture on top.
  2. Sprinkle the remaining spiced sugar over the apples.
  3. Top with the remaining batter and swirl lightly with a knife to create cinnamon-apple layers.
Bake and glaze
  1. Bake at 350F for 55-60 minutes, until a toothpick comes out clean.
  2. While the loaf is warm, drizzle the cinnamon glaze over the top.

Notes

For best swirl definition, keep the apple dice small and dry enough that the batter doesn’t turn runny. Store covered at room temperature for up to 2 days or refrigerate for up to 5 days; warm slices briefly in the microwave. Freeze for up to 2 months, wrapped tightly. For a dairy-light swap, use lactose-free milk in the glaze and lactose-free buttermilk in the batter.
