Ingredients

Dry ingredients
  • 2 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 2.5 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
Wet ingredients
  • 2 eggs
  • 0.75 cup whole milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
Apple mixture
  • 2 cup apples, peeled and finely diced
  • Cooking spray
Glaze
  • 1.5 cup powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla
  • 0.25 tsp cinnamon

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat oven to 400F and line a baking sheet with parchment, then spray generously with cooking spray for release.
  2. Whisk all-purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.
Make the batter
  1. Whisk eggs, whole milk, melted butter, and vanilla extract until smooth.
  2. Fold the wet mixture into the dry ingredients until just combined, leaving some streaks of flour.
  3. Fold in the finely diced apples so they are evenly distributed through the batter.
Bake
  1. Drop 1/4 cup portions onto the prepared baking sheet, leaving space between rounds, and spray the tops with cooking spray.
  2. Bake for 16-18 minutes total, flipping once at 10 minutes, until golden on both sides.
Glaze and serve
  1. Whisk powdered sugar, milk, vanilla, and cinnamon until smooth to form a thick glaze.
  2. Drizzle the glaze over warm fritters so it clings and sets slightly.

Notes

For the best texture, keep the batter just mixed (stop when no dry flour remains) so the fritters stay tender rather than dense. Store leftovers in an airtight container in the refrigerator for up to 3 days; rewarm in a 350F oven for 5-7 minutes to revive the exterior. Freezing is not recommended because the diced apples and glaze can soften after thawing. For a dairy-light option, use unsweetened almond milk and vegan butter in the batter and glaze.
