Ingredients
  

Graham or gingersnap crust
  • 2 cup crumbs Use graham cracker or gingersnap crumbs.
  • 0.3333333333 cup sugar For the crust.
  • 6 tbsp melted butter Melted, for binding the crust.
Vanilla cheesecake layer
  • 16 oz cream cheese Softened.
  • 0.5 cup sugar For the cheesecake filling.
  • 2 eggs Large eggs.
  • 0.25 cup sour cream Adds tang and creaminess.
  • 1.5 tsp vanilla
Pumpkin swirl layer
  • 8 oz cream cheese Softened.
  • 0.5 cup pumpkin puree
  • 0.25 cup brown sugar
  • 1 egg 1 egg for the swirl.
  • 1.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.5 tsp vanilla

Method
 

Bake the crust
  1. Preheat the oven to 325°F, then line a 9x13 pan and press the crust mixture into the bottom.
  2. Bake the crust for 8 minutes, then remove it and keep the oven at 325°F.
Make the fillings
  1. Beat the vanilla cheesecake layer ingredients until smooth, then set aside.
  2. Beat the pumpkin swirl layer ingredients until smooth, then set aside.
Assemble and swirl
  1. Pour the vanilla cheesecake over the baked crust, spreading it into an even layer.
  2. Dollop the pumpkin mixture in large spoonfuls over the vanilla layer.
  3. Use a knife to swirl dramatically across the top to create visible ribbons.
Bake, cool, and chill
  1. Bake at 325°F for 32–35 minutes, until the cheesecake is just set.
  2. Cool the bars at room temperature, then refrigerate for 3 hours before cutting into bars.

Notes

Pro tip: swirl boldly right after adding the pumpkin dollops so the ribbons stay distinct; if the filling looks too loose, let it stand 5 minutes before swirling. Refrigerate leftovers in an airtight container for up to 4 days; freeze bars in a freezer-safe container for up to 2 months. For a lower-sugar swap, use a 1:1 substitute for the white sugar and brown sugar in both layers.
