Method
Roast the vegetables
- Preheat the oven to 425°F. Position a rack in the middle so the vegetables roast evenly.
- Toss the butternut squash and Brussels sprouts with olive oil, salt, and black pepper on a large sheet pan. Spread into an even layer so the edges can caramelize.
- Roast for 25-30 minutes, tossing halfway, until tender and caramelized. Look for browned, crisp edges and squash that pierces easily.
Make the maple balsamic and serve
- Whisk maple syrup and balsamic vinegar together in a small bowl. Stir until smooth and glossy.
- Toss the roasted vegetables with the maple balsamic, dried cranberries, and toasted pecans. Serve warm so the pecans stay crunchy and the cranberries rehydrate slightly.
Notes
For deeper caramelization, avoid overcrowding the sheet pan—use a second pan if needed. Store leftovers in an airtight container in the fridge for up to 4 days and rewarm in a 400°F oven until hot. Freezing is not recommended because the Brussels sprouts and squash texture softens. If you want a lower-sugar option, use sugar-free maple syrup (or reduce the maple syrup to 1 tbsp) while keeping the balsamic and toss timing the same.
