Preheat and prep dish
- Preheat the oven to 350°F and grease a 9x13 baking dish so the casserole releases easily.
Brown the beef
- Brown ground beef with diced onion over medium-high heat until the beef is cooked through, then drain excess fat.
- Stir in minced garlic and cook for 30–60 seconds, then add yellow mustard, ketchup, Worcestershire sauce, salt, and pepper until evenly combined.
Assemble layers
- Transfer the beef mixture to the baking dish and sprinkle the cooked bacon crumbles over the top.
- Whisk the beaten eggs with heavy cream, then pour the mixture evenly over the beef.
- Top with 2 cups shredded cheddar so it melts into a golden layer.
Bake and finish
- Bake at 350°F for 20–25 minutes, until the eggs are set and the cheese turns golden and bubbly.
- Scatter the remaining cheddar in the last 5 minutes of baking for an extra-melty, browned top.
- Let it rest briefly, then serve with dill pickle slices and green onions.
Notes
For a less greasy bake, drain the beef well before assembling. Refrigerate leftovers in an airtight container for up to 3 days; reheat in the oven at 325°F until warmed through. Freezing isn’t recommended for best texture. Dietary swap: use sugar-free ketchup to keep it keto-friendly.
