Bacon Wrapped Brown Sugar Smokies

Bacon Wrapped Brown Sugar Smokies are oven-baked little smokies wrapped in bacon and coated in a brown sugar-cayenne crust that turns bubbly and caramelized. This snack bakes until the bacon is crisp, then rests briefly so the candied glaze sets.

Ingredients

Little smokies
  • 14 oz little smokies Use packaged little smokies (14 oz).
Thin-cut bacon
  • 1 lb thin-cut bacon Cut each slice into thirds for easier wrapping.
Brown sugar coating
  • 1 cup brown sugar Pack firmly for a thick candied crust.
  • 0.25 tsp cayenne pepper Adds mild heat to the sweet coating.
Melted butter glaze
  • 2 tbsp butter Melted and drizzled over the coated smokies.

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat the oven to 350°F. Line a baking sheet with foil, then parchment for easy cleanup.
Wrap and coat
  1. Wrap each smokie with a piece of bacon and secure it with a toothpick.
  2. Mix the brown sugar and cayenne pepper, then roll each bacon-wrapped smokie in the mixture to coat.
  3. Arrange the coated smokies on the lined pan. Drizzle with the melted butter and sprinkle any remaining sugar over the top.
Bake and serve
  1. Bake for 30-35 minutes at 350°F until the bacon is crisp and the sugar is bubbly and caramelized, with visible golden spots. If needed, bake 5 minutes longer for deeper browning.
  2. Cool for 5 minutes so the glaze sets, then serve warm.

Notes

For the crispiest bacon, keep the bacon pieces tight around each smokie and avoid overcrowding the pan so heat circulates. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat on a baking sheet at 350°F until warmed through. Freezing isn’t recommended because the caramelized sugar can soften when thawed. For a lower-sodium option, use uncured bacon and reduce added finishing sugar if needed.
