Ingredients
  

Apple salad base
  • 3 apples Use a mix of red and green; core and dice.
  • 3 stalks celery Thinly sliced.
  • 0.5 cup walnuts Roughly chopped.
  • 0.33 cup dried cranberries
  • 2 count green onions Sliced.
Honey yogurt dressing
  • 0.33 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 0.5 tsp cinnamon
  • 0.25 tsp vanilla extract
  • 0.1 salt and pepper Pinch of salt and pepper (to taste).

Method
 

Make the apple salad base
  1. Combine diced apples, thinly sliced celery, roughly chopped walnuts, dried cranberries, and sliced green onions in a large bowl, and stir until evenly distributed. The apple pieces should be crisp and visible throughout the mix.
Whisk the honey yogurt dressing
  1. Whisk plain Greek yogurt, mayonnaise, honey, lemon juice, cinnamon, vanilla extract, salt, and pepper together until smooth. Stop whisking once the dressing looks glossy and fully combined.
Toss and serve
  1. Pour the dressing over the apple mixture and toss gently to coat, using light motions so the apples stay intact. The salad should look lightly glazed rather than overdressed.
Chill briefly if desired
  1. Serve immediately or refrigerate up to 2 hours, then toss again before serving. This keeps the dressing clingy without turning the apples soggy.
Garnish
  1. Garnish with fresh mint if desired right before serving. Add the mint in a light scatter for a bright finish.

Notes

For best texture, dice the apples just before mixing and toss gently so they don’t break down. Refrigerate up to 2 hours (toss again before serving); this is not a freezer-friendly salad. Dietary swap: use plain dairy-free yogurt in the dressing for a dairy-free version while keeping the same honey-lemon flavor.
