Ingredients

Dry base
  • 3 cup rolled oats
  • 1 cup pecans
  • 1 cup dried apple pieces
  • 0.5 cup raisins Add after baking.
Sweet and spice coating
  • 0.33 cup brown sugar
  • 0.33 cup maple syrup Use honey instead if desired.
  • 0.25 cup coconut oil Or use unsalted butter, melted.
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp allspice
  • 0.25 tsp ginger
  • 0.25 tsp salt
  • 1 tsp vanilla extract

Equipment

  • 1 sheet pan

Method

Prep the pan and oven
  1. Preheat the oven to 325F and line a large rimmed baking sheet with parchment.
Mix oats and nuts
  1. Combine rolled oats and pecans in a large bowl until evenly distributed.
Stir the apple-pie syrup and spices
  1. Whisk brown sugar, maple syrup, melted coconut oil, cinnamon, nutmeg, allspice, ginger, salt, and vanilla extract until smooth.
Coat the oats
  1. Pour the syrup mixture over the oats and toss until the oats are thoroughly coated.
Bake
  1. Spread the coated mixture in an even layer on the prepared baking sheet.
Bake to golden
  1. Bake 30-35 minutes, stirring once at the 15-minute mark, until golden and fragrant with visible aroma.
Cool to crisp
  1. Cool completely without stirring; it will crisp as it cools, and the clusters will set.
Finish with dried fruit
  1. Break into clusters and toss with dried apple pieces and raisins until evenly mixed.

Notes

For the best crisp clusters, let the granola cool fully on the pan (don’t stir while warm), then break into chunks once it’s set. Store airtight at room temperature for up to 7 days; it also freezes well for up to 2 months. For a nut-free swap, use pumpkin seeds instead of pecans, keeping the same amount for similar crunch.
