Prep the apple fries
- Cut the peeled apples into thick wedge-shaped sticks, removing the core first so the pieces cook evenly. Aim for fry-thickness wedges for a tender center and sturdy coating.
- Set up three bowls: flour for the first dredge, beaten eggs for binding, and panko mixed with cinnamon sugar and nutmeg for the crumb coating. Keep everything in a row so each apple wedge moves through quickly.
- Dredge each apple wedge in the flour, then dip into the egg, then coat in the panko cinnamon mixture, pressing gently to help it adhere. Place coated wedges aside as you work so the coating stays put.
Air fry
- Preheat the air fryer to 400°F, then spray the basket lightly with cooking spray. This helps the coating release cleanly and start crisping right away.
- Arrange the apple fries in a single layer with space between pieces, then spray the tops lightly with cooking spray. Avoid overcrowding so steam doesn’t soften the crust.
- Air fry for 8-10 minutes, flipping halfway through, until golden and crispy. Look for crisp, browned edges and a visibly set crumb coating.
Serve
- Serve immediately with caramel sauce and vanilla yogurt (or whipped cream) for dipping. Keep dips at the ready so the fries stay crisp.
Notes
For the crispiest coating, press the panko gently onto the egg layer and keep the fries in a true single layer in the air fryer. Store leftovers in the refrigerator up to 2 days; reheat at 375°F for 3-4 minutes to re-crisp. Freezing is not recommended because the crumb coating softens after thawing. For a lighter option, use egg whites instead of whole eggs while keeping the same panko coating.
