Ingredients

For the spiced cider
  • 1.5 cups apple cider
  • 1 cinnamon stick
  • 4 cloves whole
  • 3 allspice berries whole
For the drinks
  • 1 bottle (750 mL) Prosecco chilled

Method

Make the spiced cider
  1. Combine the apple cider, cinnamon stick, cloves, and allspice berries in a small saucepan over medium heat and bring to a gentle simmer.
  2. Simmer for 5 minutes.
  3. Remove the pan from the heat, cover, and steep for 10 minutes.
  4. Strain the cider into a heatproof container.
  5. Refrigerate until completely cold, at least 1 hour.
Assemble the drinks
  1. Divide the chilled spiced cider among 6 champagne flutes.
  2. Top evenly with the Prosecco and serve immediately.

Notes

For the liveliest bubbles, chill the spiced cider completely before assembling. Refrigerate the spiced cider for up to 3 days; do not freeze. For an alcohol-free variation, use nonalcoholic sparkling wine in place of Prosecco.
