Candy the bacon
- Heat the oven to 375°F.
- Line a rimmed baking sheet with parchment paper.
- Stir the brown sugar, black pepper, and cayenne together.
- Press the mixture onto both sides of the bacon and arrange the slices in a single layer on the baking sheet.
- Bake for 25 to 35 minutes, turning the slices once halfway through, until deeply browned and crisp at the edges.
- Transfer the bacon to a wire rack and cool completely, about 20 minutes.
- Finely chop the cooled bacon.
Make the cheese log
- Mix the goat cheese, cream cheese, and honey in a medium bowl until smooth.
- Shape the mixture into a 6-inch log and wrap it in plastic wrap.
- Refrigerate for 1 hour until firm.
Coat and serve
- Unwrap the log and roll it in the chopped bacon, pressing gently so the bacon adheres.
- Serve with the crackers.
Notes
For the best coating, let the bacon cool completely before chopping it. Store covered in the refrigerator for up to 3 days; freezing is not recommended. Use gluten-free crackers for a gluten-free serving.
