Ingredients

For the bacon
  • 6 slices bacon thick-cut
  • 0.25 cup brown sugar packed light
  • 0.5 tsp black pepper
  • 0.125 tsp cayenne pepper
For the cheese log
  • 1 log (8 oz) goat cheese softened
  • 4 oz cream cheese softened
  • 1 tbsp honey
For serving
  • 1 box (8 oz) crackers

Equipment

  • 1 rimmed baking sheet

Method

Candy the bacon
  1. Heat the oven to 375°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Stir the brown sugar, black pepper, and cayenne together.
  4. Press the mixture onto both sides of the bacon and arrange the slices in a single layer on the baking sheet.
  5. Bake for 25 to 35 minutes, turning the slices once halfway through, until deeply browned and crisp at the edges.
  6. Transfer the bacon to a wire rack and cool completely, about 20 minutes.
  7. Finely chop the cooled bacon.
Make the cheese log
  1. Mix the goat cheese, cream cheese, and honey in a medium bowl until smooth.
  2. Shape the mixture into a 6-inch log and wrap it in plastic wrap.
  3. Refrigerate for 1 hour until firm.
Coat and serve
  1. Unwrap the log and roll it in the chopped bacon, pressing gently so the bacon adheres.
  2. Serve with the crackers.

Notes

For the best coating, let the bacon cool completely before chopping it. Store covered in the refrigerator for up to 3 days; freezing is not recommended. Use gluten-free crackers for a gluten-free serving.
