Ingredients

Eggs
  • 12 large eggs
Filling
  • 0.5 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 0.25 tsp smoked paprika
  • 0.25 tsp salt to taste
  • 0.25 tsp pepper to taste
Turkey Toppings
  • 0.5 cup candy corn
  • 1 small red bell pepper cut into tiny triangles
  • 48 candy eyes

Equipment

  • 1 pot

Method

Boil and chill the eggs
  1. Place the eggs in a pot and cover with cold water, then bring to a boil over high heat. Look for a full boil with steady bubbles around the eggs.
  2. Cover the pot, remove from heat, and let the eggs stand for 12 minutes. The whites should fully set when you drain and check one egg.
  3. Transfer the eggs to an ice bath and chill, then peel. Peel while cold so the shells release cleanly.
Make the deviled filling
  1. Halve the eggs lengthwise and set the yolks in a bowl, keeping the whites intact. Aim for even halves so the filling pipes neatly.
  2. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper until smooth. The mixture should be thick and creamy with no visible yolk lumps.
Pipe and assemble turkey deviled eggs
  1. Pipe the filling into the egg whites in a tall mound. Stop once each mound holds its shape above the edge.
  2. Press 4 candy corn pieces into the back of each egg to make tail feathers. Arrange them fan-style so they spread outward.
  3. Add a bell pepper beak and two candy eyes to the front of each mound. Place the beak just below the eyes so the face reads like a turkey.
  4. Chill the deviled eggs until serving. They should look set and glossy, not watery, when ready to plate.

Notes

For the smoothest filling, mash the yolks until no lumps remain before mixing in the mayonnaise and seasonings. Store covered in the refrigerator up to 3 days; freeze not recommended because the yolk filling can weep when thawed. For a lighter option, use light mayonnaise (or Greek-yogurt mayo blend) for a slightly tangier texture while keeping the same assembly steps.
