Ingredients

Potatoes and seasoning
  • 3 lb Yukon gold potatoes
  • 0.33333333333333 cup olive oil
  • 0.33333333333333 cup fresh lemon juice
  • 0.5 cup chicken broth
  • 4 garlic
  • 2 tsp dried oregano
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0.75 cup crumbled feta
  • 2 tbsp fresh dill or parsley

Equipment

  • 1 sheet pan

Method

Roast the potato wedges
  1. Preheat the oven to 425F and position a rack in the middle. This creates strong heat for crispy, golden edges.
  2. In a roasting pan, toss the Yukon gold potatoes with olive oil, lemon juice, chicken broth, garlic, dried oregano, salt, and black pepper until evenly coated. Make sure every wedge has a glossy coating from the liquid and seasonings.
  3. Spread the potatoes in a single layer in the roasting pan. Leave space between wedges so the edges can brown instead of steam.
  4. Roast for 45-50 minutes total, flipping the potatoes halfway through. Roast until the liquid is absorbed and the edges are crispy and golden, with visible browning on the corners.
Finish with feta
  1. Top the hot roasted potatoes with crumbled feta and fresh dill or parsley. Scatter evenly so the feta softens slightly and the herbs stay bright.
  2. Serve hot. The potatoes are best right after roasting while the edges are still crisp.

Notes

For maximum crisping, keep the wedges in a true single layer and don’t crowd the pan. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a hot oven or air fryer until edges re-crisp. Freezing isn’t recommended because feta and potatoes can turn watery after thawing. If you want a dairy-light option, use a crumbled plant-based feta-style product and add it right before serving so it stays flavorful.
