Ingredients

Sauteed Green Beans
  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, thinly sliced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp sliced almonds, toasted

Equipment

  • 1 cast iron skillet

Method

Saute the green beans
  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add green beans and cook 6-8 minutes, tossing, until blistered and crisp-tender.
Finish with garlic and lemon
  1. Reduce heat to medium, add butter and garlic, and cook 1-2 minutes until golden.
  2. Season with salt, black pepper, and red pepper flakes.
  3. Toss with lemon zest, lemon juice, and toasted almonds, then serve.

Notes

For even blistering, keep the green beans in a single layer and toss frequently during the 6-8 minutes on medium-high. Store leftovers in the refrigerator up to 3 days; rewarm in a skillet over medium heat until hot (note the beans soften). Freezing is not recommended since lemon and almonds lose texture. Dietary swap: use vegan butter if you want a dairy-free version.
