Ingredients

cremini mushrooms, halved
  • 1.5 lb cremini mushrooms
olive oil
  • 3 tbsp olive oil
garlic
  • 4 clove garlic minced
fresh thyme leaves
  • 1 tbsp fresh thyme leaves
salt
  • 0.5 tsp salt
black pepper
  • 0.25 tsp black pepper
butter
  • 2 tbsp butter
lemon juice
  • 1 tbsp lemon juice fresh
fresh parsley, chopped
  • 2 tbsp fresh parsley chopped

Equipment

  • 1 sheet pan

Method

Roast the mushrooms
  1. Preheat the oven to 425F. This high heat helps the mushrooms brown instead of steaming.
  2. Toss the halved cremini mushrooms with olive oil, salt, and black pepper, then spread them in a single layer on a sheet pan. Make sure cut sides aren’t piled up for even browning.
  3. Roast for 15 minutes, until the mushrooms release their liquid and begin to brown. Look for visible edges turning golden.
  4. Add the garlic, fresh thyme leaves, and butter, then toss to coat. Keep roasting 8-10 minutes more until deeply golden and fragrant.
Finish and serve
  1. Drizzle the roasted mushrooms with lemon juice. The citrus brightens the browned mushroom flavor right before serving.
  2. Sprinkle with chopped fresh parsley and serve hot. For a vivid top note, finish immediately at the end of roasting.

Notes

For best browning, use a true single layer and don’t crowd the sheet pan—stir only when you add the garlic and butter. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat in a 425F oven or skillet until hot. Freezing isn’t recommended because mushrooms soften after thawing. For a dairy-free option, swap the butter for an equal amount of olive oil or a plant-based butter.
