  • 1 puff pastry sheet Thawed.
  • 8 oz brie cheese Cut into 24 small cubes.
  • 0.5 cup whole berry cranberry sauce
  • 0.25 cup pecans Finely chopped.
  • 1 tbsp honey
  • 1 fresh rosemary sprigs For garnish.

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Prep
  1. Preheat the oven to 375F and grease a 24-cup mini muffin tin.
  2. Roll the puff pastry lightly and cut it into 24 squares, then press each square into a muffin cup.
Fill and Bake
  1. Place a cube of brie into each pastry cup, then top each with 1 teaspoon cranberry sauce.
  2. Sprinkle the finely chopped pecans over each bite.
  3. Bake for 13-15 minutes, until the pastry is puffed and golden and the brie is melted.
Finish
  1. Cool the bites for 5 minutes in the tin.
  2. Drizzle with honey and garnish with fresh rosemary sprigs before serving.

Notes

For clean-looking cups, press the pastry firmly into the tin corners so the edges don’t collapse while baking. Store leftovers in the refrigerator up to 3 days; rewarm in a 350F oven for 5-7 minutes to help re-melt the brie. These are not freezer-friendly because the pastry can soften after thawing. If you want a lighter option, swap brie for a reduced-fat brie-style cheese while keeping the bake time the same.
