Ingredients

Cranberry base
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 0.75 cup water
  • 0.25 cup orange juice
Chocolate and flavor
  • 3 oz dark chocolate 60-70%, chopped
  • 1 tsp vanilla extract
  • 0.25 tsp salt pinch
  • 1 dark chocolate shavings for garnish

Equipment

  • 1 saucepan

Method

Make the cranberry sauce
  1. In a saucepan, bring sugar, water, and orange juice to a boil over medium-high heat, watching for rolling bubbles. Visual cue: syrupy liquid should actively bubble across the surface.
  2. Add fresh cranberries and reduce to a simmer, cooking for 10-12 minutes until the berries burst and the sauce thickens. Visual cue: you should see cranberries splitting and the mixture clinging slightly to the spoon.
Melt in chocolate and finish
  1. Remove the saucepan from heat and stir in chopped dark chocolate, vanilla extract, and salt until fully melted and glossy. Visual cue: the sauce changes from red-fringed to dark shiny marbled brown.
Chill and serve
  1. Cool the chocolate covered cranberry sauce to room temperature, then chill until set and spoonable. Visual cue: it thickens and holds shape when you tilt the container.
  2. Top with dark chocolate shavings and serve chilled, spooning over cheesecake or ice cream or alongside turkey. Visual cue: visible chocolate flecks sit on the glossy surface.

Notes

Pro tip: chopped dark chocolate melts most smoothly when the saucepan is off the heat—stir until the sauce looks uniformly glossy. Store in an airtight container in the refrigerator up to 5 days; freeze up to 1 month for longer storage (thaw overnight in the fridge). For a lower-sugar version, replace sugar with a 1:1 baking sweetener designed for cooking and boiling.
