Method
Prep and preheat
- Preheat oven to 350F and grease a 9x13-inch baking dish.
Steam broccoli
- Steam broccoli 4-5 minutes until crisp-tender, then drain well.
Make the cheesy filling
- Mix cream of mushroom soup, mayonnaise, eggs, small onion, 1 1/2 cups shredded sharp cheddar, salt, and black pepper until smooth.
- Fold in steamed broccoli and spread the mixture into the prepared dish, then top with remaining shredded sharp cheddar.
Add topping and bake
- Toss crushed Ritz crackers with melted butter and sprinkle evenly over the casserole.
- Bake 30-35 minutes at 350F until bubbly and golden, with a browned crumb topping.
Notes
For best texture, drain the steamed broccoli very well so the sauce stays thick instead of watery. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350F oven until warmed through. Freezing is not recommended because the mayo-and-cheese sauce can separate after thawing. Dietary swap: use a mayonnaise alternative (like avocado-based mayo) for a dairy-free-lighter bind, keeping the cheddar for the classic flavor.
