  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt
  • 6 tbsp unsalted butter cold, cut into small cubes

Equipment

  • 1 9-inch square baking dish

Method

Prepare the dish
  1. Preheat the oven to 350°F.
  2. Lightly coat a 9-inch square baking dish with nonstick cooking spray.
Make the filling
  1. Toss the apples with the granulated sugar, cornstarch, lemon juice, cinnamon, and salt in a large bowl.
  2. Spread the filling evenly in the prepared dish.
Make the topping
  1. Stir the oats, gluten-free flour blend, brown sugar, cinnamon, and salt in a medium bowl.
  2. Work in the cold butter with your fingertips until the mixture forms coarse clumps.
Assemble and bake
  1. Sprinkle the topping evenly over the apples.
  2. Bake for 45 to 55 minutes, until the topping is golden brown and the filling is bubbling around the edges and the apples are tender when pierced with a knife.
  3. Let the crisp rest for at least 15 minutes before serving.

Notes

For the best crisp topping, keep the butter cold and work it in just until coarse clumps form. Refrigerate leftovers for up to 4 days; freeze yes, in an airtight container. For a dairy-free version, use a plant-based butter substitute.
